Coconut Rice

You will need:
Grated coconut
Cooked rice
Mustard seeds
Urad dal (split black gram)
Dried red chillies
Hing (asafoetida)
Curry leaves
Raw peanuts
Salt (to taste)
Dhania (coriander/ cilantro) leaves

Add oil in a pan. Once hot, add mustard seeds and wait for them to crackle. Now add all other ingredients except coconut and rice. Sauté on low flame till peanuts are roasted (should be less than a minute). Add coconut and mix well. Now switch off heat and add rice and salt. Mix well and garnish with chopped dhania leaves.

Simple and nutritious, this is an ideal lunch box meal. Team up with appalam, papad of poppadums and enjoy!
