Rava Idli


You will need:
Rava (Semolina)
Curds/Yoghurt
Salt
Mustard
Aesofotida
Channa Dal (Kadalai Paruppu)
Curry leaves
Green chillies (chopped)


Mix necessary amount of rava with curds (ratio 1:2) and keep aside for 20 minutes to 1/2 hour. Add salt to taste, temper with remaining ingredients and steam as you would idlis.

Serve with Pudina Thuviyal (check out the rest of the blog for the recipe) and you will love it!

You can substitute the Rava with Semiya (Vermicelli) and *voila* Semiya Idlis!

Pudina-Kothamalli Thuviyal

A thuviyal is a cooked version of a chutney. I prefer this version - you can eat it with your regular idli, dosa and also with rice and rotis. I like to combine both Pudina (mint leaves) and Kothamalli
(Coriander leaves), but this can be done with either as well.

You will need:
Pudina
Kothamalli
Puli (Tamarind)
Mustard Seeds
Urad Dal
Red Chillies
Green Chillies
Salt
Oil


Add mustard seeds to oil. Once it splutters, add the urad dal, tamarind and chillies. Stir well and add chopped leaves and salt. You can add aesofotida if you want. Let it cook for a while and keep aside to cool. Once cool, grind into a rough paste (I prefer a bit of a crunch!).
